When life hands you curry....

 Make puffs!

I made a delicious vegetable curry* in the slow cooker and had loads left over. So instead of making myself eat it for lunch for the next 3 years I decided to add puff pastry, and voila! a whole new meal.

I had enough for dinner and enough to freeze in the vacuum bags (best invention evah- and I enunciate the " ah " like a 14 year old girl)

 Just make sure you cool them before you give them to the baby, another notch in my bad parenting belt.




*Recipe for veg curry

a pile of pumpkin, sweet potato, choko (yep I'm making it cool again) potato cut into chunks, throw it in the slow cooker with a third to a half a jar of curry paste, I used Rogan Josh, add a few red lentils, enough to thicken the sauce but not too many that the men find them and whinge about eating "hippy food" . Add some water, about 2/3 up the veg, a veg stock cube. Throw the lid on. Once cooked, add some frozen peas. ( Some natural yogurt would have been nice mixed in at the end too) serve with some homemade naan.

  1. OMG I have slow cooker sausage curry on right now, and I completely forgot I had chokoes sitting there that I didn't know what to do with! You are a gem!
    P.S. Love how much your kids loved their curry puffs!

  2. Yep! Chokos are my new favourite beg, cheap & flavourless, and can be put into anything. Also choko chutney is delicious! ;)
